I hope everyone had a great 4th of July! Mine was not quite what I expected, unfortunately not in a good way. But in the end I was glad, because it led me to this easy creamy cucumber salad recipe with fresh dill.
We spent the second half of our holiday with our kids and friends by the pool. It was my daughter’s first time “swimming”, and she absolutely loved it! (I say “swimming” in quotes, because she spent most of the time pouring water among buckets. Haha.)
We grilled steak (which you could also swap with my filet mignon recipe at other times of year), paired with Caprese stuffed avocados, cauliflower potato salad (recipe coming in a few days!), and special cookies for dessert that I’ll be sharing later this month. Having an excuse to make a bunch of delicious recipes is one of my favorite aspects of holidays. What is it about good food that brings people together?
Unfortunately, we didn’t make it to fireworks this year. Even though we only spent a few hours at the pool and it was already later in the afternoon, for some reason I got heat exhaustion! I’d never experienced it before, and needless to say, it was awful. I was dizzy, lightheaded, cold, feverish, and disoriented. Definitely in no condition to see fireworks. Googling didn’t help the situation, because there are some pretty scary things online about it.
I was sad to miss our annual tradition of watching the Independence Day fireworks. At least I slowly started to feel better throughout the next day. The silver lining is, I was majorly craving some refreshing and water-packed food after the whole ordeal. (Heat exhaustion is very dehydrating.)
The result was this creamy cucumber salad recipe with dill! I made a huge batch immediately as soon as I started feeling well enough. It lasts in the fridge for a few days, so my family has been enjoying it daily for three days now!
Creamy cucumber salad is the perfect low carb summer salad. All the ingredients are extremely common, so often times you can throw it together with what you have in your fridge already. And, it only takes 10 minutes to whip up!
I used little mini cucumbers for my creamy cucumber salad. Everyone seems to enjoy the fact that they are sweeter than large ones. Besides, it makes the prep process just a tiny bit faster, since you only have to slice them. No additional chopping required.
Don’t feel like you have to use small cucumbers, though. All cucumbers are pretty sweet this time of year, in the middle of the summer. Any size will be delicious!

BEST CREAMY CUCUMBER SALAD RECIPE WITH DILL (LOW CARB, GLUTEN-FREE)
- 1/2 cup Sour cream
- 2 tbsp Fresh dill (chopped)
- 1 tbsp Olive oil
- 1 tbsp Lemon juice
- 1/2 tsp Garlic powder
- 1/2 tsp Sea salt
- 1/4 tsp Black pepper
- 6 cups Cucumbers (chopped)
- 1 small Red onion (thinly sliced)
- In a large bowl,whisk together the sour cream, dill, olive oil, lemon juice, and garlic powder. Season with sea salt and black pepper to taste.
- Stir in the chopped cucumbers and red onions.
